Hedquist's Secret Meatball Recipe
Ingredients
Ground pork 8oz.
Ground beef 8oz.
Ground veal 8oz.
Garlic minced 2 tbl.
Onion diced 1 large
Bread crumbs 1 cup
Eggs 4 ea.
Pecorino grated ½ cup
Kosher salt 3 tbl.
Red pepper flakes 1 tbl.
Soybean (cooking) oil ½ cup
Take all ingredients and put into a bowl. Mix with clean hands, but don’t over-mix. Portion mix into golf ball-sized spheres. Add cooking oil to a large sauté pan and turn to medium-high. Once the oil starts to smoke, add the meatball and brown on all sides. Hedqiusts recommends serving them over angel hair pasta with your favorite sauce.
